The retro decorating style is making a delicious comeback resplendent with buttercream ruffled swags, bows and lace embellishments. Using a variety of piping techniques and a bit of time devoted to practice new piping skills, you will elevate your skills to create an intricate vintage style cake that Chef Susan lovingly calls “Victorian Visions.” How to create a design template will also be discussed as part of the lab experience.
STUDENTS WILL:
- Review the three essentials of cake art.
- Review and demonstrate skill of filling and icing a smooth commercial finish that will be the backdrop of the vintage design.
- Focus on applying designs to the side of a round cake.
- How to create and use a template to evenly space side designs.
- How to mark the cake to determine design placement.
- How to pipe controlled swag borders and side decorations.
- How to use over-piping as a buttercream technique.
- How to pipe IMBC to create lace.
- How to control icing textures.
- How to pipe buttercream ribbons.
- How to color icing to create Italian Meringue Buttercream (IMBC) roses and various IMBC side decorations.
- How to use an extra-large rose nail.
